I figured Girl Scout cookie Thin Mints are here so why not try to make homemade!!
- 2 sticks butter and room temperature
- 1 cup sugar
- 2 egg yolks
- 1 tsp. vanilla
- 1 cup flour
- 1 cup unsweetened cocoa powder
- 1/2 tsp. course salt
- 2 cups confectioners sugar
- 1 1/2 tsp mint extract
- 3 tablespoons whole milk
- 3 tablespoons melted butter
Using mixer, beat cream butter and sugar on medium until pale and fluffy. Scrape down the bowl. Beat in egg yolks and vanilla until just combined. In bowl mix flour, cocoa and salt, the combine with butter mixture. Mix on low speed until just incorporated. Halve dough and roll each into 1 1/2 inch diameter log. Tightly wrap in parchment or wax paper. Chill for 2 hours. Trim off ends then slice into 1/4 inch rounds. Bake on cookie sheet at 350 for 17 - 20 minutes. Cool cookies on a rack.
Mix confectioners sugar with whole milk, mint extract, melted butter. Tint with green food coloring. Chill until icing is spreadable. Make sandwiches out of the cookies with icing as the filling. Makes 2 dozen.
