Coconut Caramel Cookies (dulce de leche!!)

This is one of the best cookies! Be sure to make the dulce de leche the night before! 

Cookie Ingredients:

  • 2 sticks butter and room temperature
  • 1 cup sugar
  • 2 egg yolks
  • 1 tsp. vanilla 
  • 2 cups flour
  • 3/4 cup shredded coconut 
  • 1/2 cup toasted coconut (for outside of cookie) 
  • 1/2 tsp. course salt

Filling:

Dulce de leche ( I made mine with 1 can of sweetened condensed milk, but you can buy it)  Put sweetened condensed milk in a bowl cover loosely. Put  bowl in pan of water that goes about half way up. Put in oven 425 oven for about an hour and stir often. It will get brown and gooey. The longer you keep in the browner it will get. I wanted it to be golden brown. Cool in fridge. I cooled it over night.

Instructions:

Using mixer, beat cream butter and sugar on medium until pale and fluffy. Scrape down the bowl. Beat in egg yolks and vanilla until just combined. In bowl mix flour, coconut and salt, the combine with butter mixture. Mix on low speed until just incorporated. Halve dough and roll each into 1 1/2 inch diameter log. Tightly wrap in parchment or wax paper. Chill for 2 hours. Trim off ends then slice into 1/4 inch rounds. Bake on cookie sheet at 350 for 17 - 20 minutes. Cool cookies on a rack.

Spread 1 tsp dulce de leche on cookie and make a sandwich. Also spread dulce de leche on the sides of the cookie and roll in toasted coconut. Makes 2 dozen.
