Date Crumble (A.K.A. Anything Crumble)

This was given to me by my BFFL Joanie and it came from her Nana (Harrington) The beauty of this is that you can pick your filling. I have made this with figs and it was fabulous!

Filling Ingredients:

  • 1 lb. pitted dates chopped 
  • 1 cup brown sugar
  • 2/3 cup water 
  • 1 tsp. vanilla

Combine all ingredients in a sauce pan and stir until sugar dissolves. Cook over medium heat until it reaches simmering stage. Simmer for 1 minute. Remove from heat and let cool.

Crust Ingredients:

  • 1 1/2 cup rolled oats 
  • 1 1/2 cup flour 
  • 1 cup brown sugar
  • 1/2 tsp. baking soda
  • 1 cup chilled butter (cut into 1 inch pieces)

Mix oats, flour, brown sugar and baking soda in a medium bowl. Add butter and cut in with pastry blender until course and crumbly. Grease 9x13 pan. Spread half of crust mixture into pan and press. Spread filling and sprinkle with rest of filling on top. Bake 350 for 30 minutes (or more if needed)

Next time I am going to try raspberries or apricots! You could also add a few nuts too! Very versatile!
