Whoopie Pies

If you are going to a barbecue today, surprise them with Whoopie Pies!!

Ingredients for pies

  • 2 cups all-purpose flour
  • 1/2 cup Dutch-process cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup well-shaken buttermilk
  • 1 teaspoon vanilla
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg

Beat sugar, shortening together and add egg. Mix well. Sift together dry ingredients. Add dry ingredients alternately to mixture with milk. Drop approximately 2 tablespoons of mixture on to lightly greased baking sheet (they will expand when baked so be careful not to make too big).  Bake 7 minutes at 425 degrees.  

Ingredients for filling:

  • 1/2 c. shortening 
  • 1 c. marshmallow fluff
  • 1 c. confectioner’s sugar 
  • 1/2 teaspoon vanilla 

Cream shortening with sugar and confectioner’s sugar.  Mix in fluff and vanilla.  Spread on cooled pies and make sandwiches.
