We had a wonderful dinner with Joanie, Paul and Monica last night and I made these for an appetizer. Paul suggested to also add some parmesan cheese and Dennis said he wanted more bacon! You can never have enough cheese and bacon! I might add these next time I make them. We also thought this would be a good side dish with dinner.
- 4 tomatoes
- 1/2 pound bacon
- 1 clove garlic
- 1/2 c. chopped lettuce
- 1/2 c. chopped stale bread cubes
- 2 tablespoons mayonnaise
- Salt and Pepper
Hollow out tomatoes and invert to drain. Season with salt and pepper. Cook bacon with clove of garlic, chop then toss with lettuce, bread cubes, mayonnaise and salt and pepper. Stuff mixture into tomatoes then brush with bacon drippings. Bake 20 to 30 minutes at 425 degrees.
